I'm just curious if people with kidney problems must adhere to a specific diet.

Most dialysis patients -- those on hemo and those on PD -- must stick to a "renal diet." Patients on PD have less restrictions than those on in-center hemodialysis (in fact, often have to eat more protein) and those on nocturnal dialysis (done 5-6 nights a week for 6-8 hours) have a nearly normal diet.
